Rose Lavender Granola

I have been obsessed with granola lately. Grant's been making some tasty granola, so I decided to share the recipe. The granola is a little different than the typical granola that you might normally buy. The main difference is that it's not clustered, not as brown, and not as sweet. We made it a little differently, but I think it's yummy. If you do end up trying this recipe, I hope you enjoy it as much as we do!

Ingredients
2 cups of gluten-free oats 
5 tablespoons of honey 
1/2 teaspoon of vanilla extract 
1/4 cup of coconut flakes 
1/3 cup of almond slices 
1/4 teaspoon of dried lavender 
1/4 teaspoon of 2 dried rose buds 
1/4 teaspoon of coarse sea salt 
1/2 tablespoon of coconut oil

Preheat the oven to 350 degrees. In a medium sized bowl, throw in the oats and almond slices. Add the lavender by crushing it between your fingers. Take the dried rose buds and rip and crush each petal into the bowl. I usually stop before the yellow/brownish centered petals. Add sea salt and mix. I like having a hint of salt in my granola, especially for granola you're just going to snack on without milk. Be careful if you add too much salt, it can make the milk a little salty.

Now drizzle the honey one tablespoon at a time, making sure to mix after every tablespoon. Try to seperate clusters to make sure the honey doesn't get trapped. Once all the oats are covered in honey add the vanilla extract and mix one more time.

Then take a glass baking dish and grease it up with coconut oil. I used a 13" x 9" baking dish. I like to put some coconut oil on a paper towel and spread it. Then throw in the mixture and spread it out evenly. Put the baking dish in the oven for 10 minutes. After 10 minutes, take out the baking dish and mix the granola. Put it back in the oven for 5 more minutes. This time when you take it out, mix in the coconut flakes. Now put the baking dish in again for 4 more minutes or until the coconut browns a little. Then take the baking dish out and make sure the granola is not sticking to the baking dish and have it cool for little bit before you put it into a jar, but don't hesitate to nom it right away.
